Mexican Style zucchini boats


These are similar to stuffed peppers, but zucchini style! I made these for dinner tonight and they were a hit! Everyone loved them. My kids wouldn’t eat the zucchini, but they loved the rice mixture… I’ll take it though! I think the rice mixture would be good on salads, tortillas, as a side dish… just a few other uses I can think of. It was really yummy and easy to make!

Mexican Style Zucchini Boats

  • 1 Tbsp olive oil
  • 1/2 small onion
  • 2 tsp taco seasoning
  • 1 medium-large pepper (I used green but any color would work)
  • 1 can corn
  • 1 can beans (I used pinto but black would be yummy too)
  • 1 cup cooked rice or quinoa (I did 1/2 and 1/2)
  • 1 cup salsa
  • Mexican blend cheese
  • A few zucchinis

Preheat oven to 400 degrees.

Warm olive oil in a deep skillet. Chop pepper and onion into small pieces. Add onion, peppers, and taco seasoning to warm oil and saute for a 2-3 minutes (until soft). Add corn, beans, rice, and salsa to skillet. Warm for about 5 minutes. Lightly coat a 9×13″ pan with oil or spray. Cut zucchini vertically in half, hollow out the centers, and arrange in oiled pan. Fill zucchini with mixture, sprinkle with cheese, cover with foil, and bake for 25 minutes. Enjoy!
